Galantina di pollo e Prosciutto

Aspic of ham & vegetables chicken galantine on Caesar salad,warm ratatouille and pomegranate dressing.

The preparation of a molded Aspic is started by decorating the bottom and sides of the mold;a little jelly almost at setting point, is poured in and by rolling the mold on the ice it will adhere to the sides. The items of decoration are then dipped into cool melted jelly and immediately fixed in place: the decoration is a taste and discretion of the person doing it and cannot be defined precisely, the only thing that can be said is that it must be absolutely correct and should appear neat and clean when the Aspic is molded out. In this case the aspic is sitting on a simple tossed sliced romaine leaf dressed with Caesar dressing, and the warm vegetables ratatouille at the bottom. The sauce is a pomegranate juice reduction with shallots, blended and emulsion with lemon juice and olive oil.
