Ingredients


1 lb of dry "Bucatini" pasta
2 ounces ladle of olive oil
1/2 large onion
sea salt and ground black pepper
8 ounces of sliced apple wood smoked bacon
6 ounces of fresh grated "Pecorino Romano cheese

Apple wood smoked bacon "Bucatini"


Preparation

Chop the onion, cut the sliced apple-wood smoked bacon into small dices.Bring to boiling a salted pot of water and put the dry bucatini pasta, stir and cook for about 12 to 14 minutes.In a large sauteed frying pan heat it up the ladle of oil, add the chopped onions and cooked slowly until soft, add then the bacon and let it cooked with the onions until crispy, poor in a ladle of the pasta cooking water and deg laze the frying pan, strain the bucatiini out of the water and add it to the pan start reducing and sauteing the pasta with the onion and the bacon all together, add then the fresh grated Pecorino Romano cheese, and a few ladle more of cooking water, tossed and reduce more on the flame until a light creamy film is created on the pasta, drizzled little more olive oil and serve.
