1 quart of vegetable Minestrone soup
1 each fresh shallots
1 cup of carnaroli rice
1/2 cup of fresh grated Parmigiano Reggiano

Risotto Minestrone


Prepare your vegetable "Minestrone" soup following the link on the ingredients selections.
Chop the fresh shallots, and braised them in a small casserole with a touch of olive oil, add the rice and toasted until the rice start to get gold color, add the warm vegetable Minestrone soup and keep stirring the rice add more soup until the rice will absorb all the liquid and incorporate the vegetables, turn off the flame let it rest for few second and then add the fresh grated Parmigiano Reggiano, serve.
