Ingredients
- 1 liter heavy cream
- 4 oz whole milk
- 1 cup sugar
- 10 egg yolks
- 2 whole eggs
- 1 vanilla bean
- Pinch of salt
- Zest of 1 lemon
- 2 oz fresh strawberries
Preparation
In a bowl, combine heavy cream, milk, sugar, lemon zest, vanilla bean, egg yolks, and whole eggs. Mix gently until well combined.
Pour the custard into ramekins. Place ramekins in a water bath and bake at 265°F for 1 hour 30 minutes. Let cool completely.
Top each with thinly sliced fresh strawberries. Sprinkle sugar on top and caramelize with a torch just before serving.
