Summer peach salad with grilled onions and baby greens

Ingredients

Base recipe = 1 serving. Pin
  • 100 g large yellow onion, thick rings
  • 150 g white summer peach, thin wedges
  • 120 g vine-ripe tomato, thin wedges
  • 28 g baby mixed greens
  • 15 g white balsamic vinegar
  • 13.5 g extra-virgin olive oil
  • Sea salt & freshly cracked black pepper

Preparation

  1. Grill the onion rings until lightly charred; let cool.
  2. Marinate onions with white balsamic for 10 minutes.
  3. In a bowl, toss peach and tomato with EVOO, salt and pepper.
  4. On a plate with a ring mold, layer onions, then peach–tomato, then lightly oiled greens. Remove ring and serve.
