Chicken Consommé
With Fine Julienne Carrots and Zucchini
Ingredients
- 1 gallon of chicken consommé
- 2 jumbo carrots, peeled
- 2 green zucchini (green part only), julienned
- Sea salt
- Fresh cracked black pepper
Preparation
Use a mandoline to finely julienne the peeled carrots and the outer green part of the zucchini. Set aside.
In a large casserole, bring the chicken consommé to a gentle boil. Lightly season the julienned vegetables with sea salt.
Add the vegetables to the hot consommé just before serving to preserve their texture and color. Serve immediately in warmed bowls.
