Preparation
- Halve the cherry tomatoes and place in a chilled bowl.
- Shave the red onion thinly (mandoline) and add to tomatoes.
- Season with sea salt and black pepper; rest 3–5 minutes.
- Dress with extra-virgin olive oil and torn basil leaves. Serve.
