Ingredients

Base recipe = 2 servings. Pin
  • 2 oz cherry tomatoes
  • 1/2 large red onion
  • 1 tbsp extra-virgin olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh basil leaves

Preparation

  1. Halve the cherry tomatoes and place in a chilled bowl.
  2. Shave the red onion thinly (mandoline) and add to tomatoes.
  3. Season with sea salt and black pepper; rest 3–5 minutes.
  4. Dress with extra-virgin olive oil and torn basil leaves. Serve.
