Preparation
- Thinly slice the smoked chicken and persimmon.
- Toss baby greens with EVOO, balsamic, salt and pepper.
- Fan persimmon on a plate, top with dressed greens and smoked chicken.
- Finish with shaved Parmigiano, if desired. Serve immediately.
