Smoked chicken and persimmon salad with baby greens

Ingredients

Base recipe = 2 servings. Pin
  • 170 g smoked chicken breast, thinly sliced
  • 200 g ripe persimmon, thinly sliced
  • 28 g baby mixed greens
  • 13.5 g extra-virgin olive oil
  • 5 g balsamic vinegar
  • Sea salt & freshly ground black pepper
  • 14 g shaved Parmigiano Reggiano (optional)

Preparation

  1. Thinly slice the smoked chicken and persimmon.
  2. Toss baby greens with EVOO, balsamic, salt and pepper.
  3. Fan persimmon on a plate, top with dressed greens and smoked chicken.
  4. Finish with shaved Parmigiano, if desired. Serve immediately.
